Walnut-Date Coffee Cake

This is great for grown-ups and kids alike!  Great as a breakfast treat with coffee or a healthy snack during the day, this cake is sure to bring you joy.  The dates are the secret in making this cake full of sweet goodness!! 

Cake Ingredients:

  • ¼ cup grass-fed cultured butter, melted (slightly cooled) or coconut oil

  • ⅔ cup pure honey (no additives)

  • 3 large eggs - room temperature

  • 1 TBSP vanilla (no sugar added)

  • 2 ½ cups blanched almond flour - not almond meal (I use Wellbees)

  • 1 tsp baking soda

  • ¼ tsp sea salt

Filling Ingredients:

  • ¼ cup melted butter or coconut oil

  • ¾ cup chopped walnuts - soak for 20 minutes, drain and rinse and then chop

  • ½ cup date paste (to make this soak 1 cup of dates in boiling water for 20 minutes, drain, add ¼ cup water and ½ tsp cinnamon and blend in a food processor)

  • 1 TBSP cinnamon

Directions: 

Cake

  1. Preheat the oven to 350 and line an 8x8 pan with parchment paper. 

  2. In a large bowl, whisk the melted butter (or coconut oil), eggs and vanilla until smooth.

  3. In a small bowl, mix the flour, baking soda and salt.

  4. Add the dry to the wet ingredients and mix well.

  5. Pour half of the batter into the pan with parchment paper and prepare the filling.

Filling

  1. In a small bowl, mix the melted butter (or coconut oil), walnuts, date paste and cinnamon. 

  1. Spread the filling over the first layer of cake and smooth with a spatula.  Then pour the second half of the cake batter over the filling. 

  1. Bake for 35 - 40 minutes.  Remove from the oven and let cool - the cake will firm up as it cools. This cake keeps well stored in a sealed container.
