Mango Gummies

These are a sweet treat and easy on the belly, especially with gut healing gelatin.  My kids love keeping them in the freezer and eating them frozen when they are a bit icy.  

Prep time: 5 minutes Cook time: 5 minutes

Ingredients:

  • ½ cup water

  • 2 TBSP gelatin - I use Great Lakes Beef Gelatin

  • 2 cups frozen mangos (no sugar added - just mangos)

  • 1 TBSP lemon juice + 1 TBSP water

  • ½ cup mango puree 

  • 2 TBSP pure honey (no additives)

Directions:

  1. Dissolve 2 TBSP gelatin in ½ cup water - let set.

  2. Gently simmer 1 TBSP water, lemon juice and mangos in a small saucepan for about 10 minutes.  Cool slightly and blend well - I use a handheld blender.  

  3. Take ½ cup of the puree (I save the rest of the puree to mix into yogurt) and put it back in the saucepan along with the water gelatin mixture.  Warm over low heat, add the honey and whisk until everything is incorporated.

  4. Spoon into candy molds or ice cube trays. 

  5. Let set in the freezer for 15 minutes.  These can be stored in the fridge or the freezer.
