Vanilla Icing

This is a simple and delicious icing recipe - and feels as satisfying as the traditional powdered sugar recipes.  The most important part of this recipe is the honey - it needs to be a thick, creamed honey - not a runny honey.

Prep time: 5 minutes

Ingredients:

  • 1 cup vegetable shortening - I use Spectrum Organic

  • 1 cup creamy raw honey - the Y.S. Eco Bee Farms is a brand I use often, but any honey similar to this in texture and color will work

  • 1 tsp vanilla extract (no sugar added) or 1 tsp of freshly squeezed lemon juice

Directions:

  1. Whisk all ingredients together with a fork.

  2. Store in the refrigerator where it will last a few weeks - if it lasts that long!
