Cashew Butter Fudge

Cocao butter is a magical ingredient for making candy that is decadent, especially if you are avoiding chocolate or cacao powder (different than cacao butter.)  Here we mix it with cashew butter and end up with a final result that fudge-like in texture. This is super rich so a little goes a long way!

Prep time: 10 minutes

Ingredients:

  • ⅓ cup cocao butter (I use the Sunfood brand)

  • ⅓ cup pure honey (no additives)

  • 1 cup raw cashew butter (I use the Artisana brand)

  • 1 TBSP vanilla extract (sugar free - only vanilla and alcohol)

Directions:

  1. Melt the cocao butter over very low heat in a small saucepan.

  2. Once melted, remove from heat and stir in cashew butter, honey and vanilla.

  3. Whisk until well blended. 

  4. Pour 1 TBSP each into the molds of your choice.  I used these fun heart molds. Ice cube trays also work!

  5. Freeze for about 15 minutes until firm.  These can be stored in the refrigerator or freezer depending on your preference.  Enjoy!
