Raspberry Heart Gummies

These are a sweet and refreshing treat and of course, very festive for Valentine’s Day!  Once you get the hang of making these, you can do all sorts of fun gummies with different molds or even just ice cube trays. The raspberries give it this great red color! 

Ingredients:

  • 2 TBSP gelatin - I use Great Lakes Beef Gelatin

  • ½ cup water

  • 10 oz frozen raspberries

  • 1 TBSP lemon juice + 1 TBSP water

  • ½ cup water

  • ½ cup strained raspberry juice

  • 3 TBSP pure honey (no additives)

Directions:

  1. Dissolve 2 TBSP gelatin in ½ cup water - let set.

  2. Gently simmer 1 TBSP water, lemon juice and raspberries in a small saucepan for about 10 minutes.  Cool slightly and strain to discard the seeds - this is a bit of a do and kind of messy, but worth it if you don’t want the seeds.

  3. Take ½ cup of the juice (I save the rest of the juice to pour over yogurt) and put it back in the saucepan along with the water gelatin mixture.  Warm over low heat, add the honey and whisk until everything is incorporated.

  4. Spoon into heart molds or ice cube trays. 

  5. Let set in the freezer for 15 minutes.  These can be stored in the fridge or the freezer - my kiddos prefer them from the freezer.
