Donuts

All my kiddos love these donuts! This is adapted from a Sweet Laurel recipe and I have made a few tweaks to it.  There is very little honey in these, and they are still a great treat. This recipe makes about 15 little delicious donuts! I used a mini-donut pan, but you can also use regular size or even muffin tins. The recipe calls for separating the egg yolks from whites which is a drag, but worth it!   I used Vanilla Icing, which is equal parts shortening and raw creamed honey with a splash of vanilla.

Prep time: 15 minutes Cook time: 15 minutes

Ingredients:

  • Grass-fed cultured butter for greasing the donut pans - we use Kerrygold

  • 1 ½ cups blanched almond flour - not almond meal (I use Wellbees)

  • ½ tsp baking soda

  • Pinch of sea salt

  • ¼ cup 24-hour yogurt or Greek yogurt

  • ¼ cup pure honey (no additives)

  • 1 tsp vanilla extract (no sugar added - just vanilla and alcohol)

  • 1 tsp apple cider vinegar - you can also use fresh squeezed lemon or orange juice for a lovely flavor

  • 2 TBSP grass-fed cultured butter, melted (you can also use coconut oil)

  • 2 large eggs - room temperature, whites and yolks separated

Directions:

  1. Preheat the oven to 350 degrees and grease your donut pans with butter. 

  2. In a small bowl, mix together the almond flour, baking soda and pinch of sea salt. 

  3. In a large bowl, whisk the yogurt, honey, vanilla extract, apple cider vinegar and melted butter.  

  4. In a medium sized bowl, crack your eggs, letting only the whites drop into this bowl, placing the yolks into the large bowl with the other wet ingredients.  

  5. In the large bowl, whisk the egg yolks into your wet mixture.  Then add the dry ingredients and mix well. 

  6. Take out your beaters and beat the egg whites in the medium bowl for a couple minutes until they are frothy.   Add the frothy egg whites into your large bowl mixture and mix well. 

  7. Spoon the mixture into your donut pans and bake for about 14 minutes.  

  8. Remove from the oven and let cool completely before removing.  I use a flexible frosting knife to loosen the donuts and remove them.  Frost when completely cooled.
