Erica’s Story

Erica cooking.jpeg

I’ve created this website so many times in my head, standing in the kitchen cooking, poring over recipes on my iPhone late at night, planning menus in my head - always thinking of what I would write and what recipes I would share. How I would try to connect with, support or inspire others who are experiencing something similar - trying to heal yourself, your family and/or loved ones with food. With diet restrictions that may feel limiting, confusing, and overwhelming at times. But also empowering.

The sheer enormity of it - knowing that the food you feed your family directly affects their health. It sometimes stops me in my tracks – the food I provide for my family has the potential to heal and restore their health.

We researched, learned about and incorporated many elements of several grain-, gluten-and sugar-free, fiber-rich, low-lactose and pre-and probiotic heavy diets.  This was a drastic change for us in many regards.

I have always loved cooking and been passionate about healthy food.  You know the sort of person. Homemade baby food. Healthy school lunches. Brown bread. My children don’t know scrambled eggs without spinach or rice without veggies mixed in. I am very comfortable in the kitchen and even in preparing accommodating diets. I have a gluten allergy and have been gluten free for years. Adapting to a new diet and cooking 100% of the time –with ingredients and recipes that were not necessarily on autopilot for me – was a bit of an adjustment.

This website is for people caring and cooking for themselves or their families and striving to provide healthy, interesting and nourishing meals that everyone will love. Mealtimes have always been a space of, and place for, joy ever since I was a child. And I didn’t want this to change because of dietary changes - my goal will always be to bring joy with food.

I have scoured through hundreds of recipes and spent countless hours researching how to make, adapt and tweak recipes to make delicious, sustaining and healthy food. There are so many wonderful resources out there and the people and groups I have connected with over social media have been a tremendous support. I am grateful. I have learned an enormous amount in the past year and am excited to share this with you!

None of the recipes in this website contain gluten or refined sugar. Many are grain-free. Dairy is low-lactose focused, limited or optional. We eat meat yet are constantly striving for more plant-based and fiber-rich meals and more veggies into the diet in general!

These recipes are for anyone looking improve their health, eat a wider variety of foods or simply get more nutritious foods into their diets.  All these recipes are nourishing as well as delicious!
