Honey Walnuts
Honey Walnuts
These are an addicting sweet, sticky and crunchy treat. Easy to make, these are terrific on a snack board, in yogurt or simply on their own!

Ingredients:
3 cups raw walnuts, soaked for 20 minutes and drained well
2 TBSP grass-fed, cultured salted butter - we use Kerrygold
6 TBSP pure honey (no additives)
1 tsp cinnamon
Instructions:
Soak the walnuts in a medium sized bowl for 20 minutes (optional). Drain and shake out any excess water.
Line a baking sheet parchment paper.
Melt butter over medium heat in a medium-size saucepan.
Mix in the honey and cinnamon and stir together for 1 minute.
The stir in the walnuts and cook over medium heat for 5 minutes. The mixture will bubble and caramelize which is what you want - keep stirring until well coated.
Pour nuts onto the lined baking sheet and spread them out. Let cool for 10 minutes or so. They will keep nicely in a sealed container in the refrigerator, where they will harden up a bit, especially if you have soaked them.
