Honey Walnuts

These are an addicting sweet, sticky and crunchy treat.  Easy to make, these are terrific on a snack board, in yogurt or simply on their own!

Prep time: 5 min Cook time: 5 minutes

Ingredients:

  • 3 cups raw walnuts, soaked for 20 minutes and drained well 

  • 2 TBSP grass-fed, cultured salted butter - we use Kerrygold

  • 6 TBSP pure honey (no additives)

  • 1 tsp cinnamon

Instructions:

  1. Soak the walnuts in a medium sized bowl for 20 minutes (optional). Drain and shake out any excess water. 

  2. Line a baking sheet parchment paper. 

  3. Melt butter over medium heat in a medium-size saucepan.  

  4. Mix in the honey and cinnamon and stir together for 1 minute. 

  5. The stir in the walnuts and cook over medium heat for 5 minutes.  The mixture will bubble and caramelize which is what you want - keep stirring until well coated.  

  6. Pour nuts onto the lined baking sheet and spread them out.  Let cool for 10 minutes or so.  They will keep nicely in a sealed container in the refrigerator, where they will harden up a bit, especially  if you have soaked them.
