Peanut Butter Bars

These simple 2-layer bars are a perfect treat to keep in the freezer.  They satisfy a sweet tooth and are healthy to boot!

Prep Time: 20 minutes

Ingredients:

Bottom Layer

1 TBSP melted coconut oil

1 TBSP pure honey (no additives)

1 tsp vanilla (no sugar added)

¾ cup almond flour - not almond meal (I use Wellbees)

Pinch of sea salt

Peanut Butter Layer

½ cup of pure peanut or almond butter (only nuts and salt - no other ingredients)

1 ½ TBSP pure honey (no additives)

1 TBSP melted coconut oil

Pinch of sea salt

Directions:

  1. Preheat the oven to 350 degrees and line a 8x8 baking dish with parchment paper.

  2. Melt over low heat all the first 3 bottom layer  ingredients stirring until combined. Remove from heat and transfer to a mixing bowl.

  3. Add in the almond flour and sea salt. Use your hands to mix into a dough. Press evenly into the bottom of your baking dish.

  4. Bake at 350 degrees for 10 minutes.  Set aside and let cool for 15 minutes. 

  5. While the bottom layer is baking, stir together the peanut butter layer ingredients.

  6. Spread the peanut butter mixture over the base and freeze until firm. 

  7. Cut into small bars and store in the refrigerator or freezer.
