Tropical Mango Popsicles

Creamy Berry Popsicles

Pineapple and mango are a delicious combination on their own, but the addition of banana and yogurt make this a creamy tropical treat.  These are a favorite in my house and I make these often.  They make 6 large-sized popsicles.

Prep time: 10 minutes Cook time: 6 hours in the freezer

Ingredients:

  • 1 cup of frozen mango

  • 1 cup of frozen pineapple

  • 1 very ripe banana

  • ½ cup water

  • 2 TBSP pure honey (no additives)

  • 2 TBSP 24-hour fermented yogurt (if SCD) or Greek yogurt

Directions:

  1. In a small saucepan, gently simmer the mango and pineapple and ½ cup water for about 8-10 minutes until soft (this step is optional - you can also just let the frozen fruit thaw out a bit, but we find it is easier on the belly if cooked).

  2. Let the mixture cool, add the banana and puree/blend the fruit in a blender or with a handheld blender.

  3. Mix in the honey into the mango/pineapple/banana puree and whisk until smooth. Then mix in the yogurt.

  4. Pour into your molds (these are our current fave) and freeze for 4-6 hours.
