Apple Date Walnut Cake
This is a delicious everyday sort of cake. Honeycrisp or sweet gala apples work well in this recipe. There is a drizzle of icing on these - combo of shortening, honey and vanilla. Note that I soak the walnuts for about 15-20 minutes before chopping them. Everyone in my family loves this and it doesn’t last long!
Prep Time: 20 minutes Cook Time: 25 minutes
Ingredients:
1 cup walnuts, soaked for about 20 minutes and finely chopped
4 TBSP grass-fed cultured butter, melted (or ¼ cup avocado oil)
¼ cup pure honey (no additives)
1 tablespoon vanilla extract (no sugar added)
3 large eggs
1½ cups blanched almond flour - not almond meal (I use Wellbees)
¼ teaspoon sea salt
½ teaspoon baking soda
½ teaspoon apple cider vinegar
1 cup chopped apples (peeled or unpeeled)
1 cup pitted dates and finely chopped
Directions
Preheat the oven to 350 degrees and grease an 8x8 glass pan.
Soak one cup of walnuts in a bowl of water and set aside.
Melt the butter and stir in the honey and vanilla
Add in the eggs and whisk until well blended.
Add in almond flour, salt, baking soda and apple cider vinegar and mix well.
Rinse and drain the walnuts.
Fold walnuts, apples and dates into the batter.
Spread the batter into the greased pan and bake for 25 minutes until a toothpick comes out clean.
Cool in the pan for and cut into squares when serving. If icing the cake (we use Vanilla Icing), let the cake cool completely before icing the cake.
