Chocolate Banana Muffins

Chocolate Banana Muffins (Dairy, Egg and Gluten Free)

These are a super yummy and healthy snack and super easy to throw together!  I always like to have a few treat recipes on hand that don’t use eggs or dairy and this one delivers! I mad large size muffins here, so it only made *, but normally I do mini-muffins with and it makes about 14.

Prep time: 5 minutes Cook time: 20 minutes

Ingredients:

  • 1 large very ripe banana

  • 2 TBSP melted avocado or coconut oil

  • 1 TBSP vanilla (no sugar added)

  • 1 TBSP pure almond butter (no other additives or ingredients - just almonds and salt.)

  • 2 TBSP pure honey (no additives)

  • ½ tsp baking soda

  • ¼ tsp sea salt

  • 1 tsp cinnamon

  • 1 ½ cups blanched almond flour - not almond meal (I use Wellbees)

  • ½ cup dairy- and refined-sugar free chocolate chips (I use Hu)

Directions:

  1. Preheat the oven to 350 degrees. 

  2. In a large bowl, beat the first 5 ingredients together.  

  3. Mix in the next four ingredients and stir until combined and then gently stir in your chocolate chips.

  4. Measure out about 2 TBSP or so into each muffin container and bake for 20 minutes.  We like them slightly browned on top.
