Cinnamon Apple Walnut Bars
My kids absolutely love this! It is similar to a spice cake, but heartier with the addition of apples and walnuts. I often have to tell my oldest son to stop eating this to save some for the others. It is also super yummy with the addition of Vanilla Icing.
Prep Time: 15 minutes Cook Time: 25 minutes
Ingredients:
½ cup walnuts, soaked, for about 20-30 minutes, rinsed and drained and then finely chopped
3 TBSP grass-fed, cultured butter - we use Kerrygold or 3 TBSP coconut oil (triple filtered so it doesn’t have the strong coconut taste)
¼ cup pure honey (no additives)
1 tsp vanilla (no sugar added)
2 large eggs
1½ cups blanched almond flour - not almond meal (I use Wellbees)
¼ tsp sea salt
½ tsp baking soda
1 tsp cinnamon
1 cup chopped apples - (1 medium-sized apple) - I leave the peel on, but if peels bother you, do unpeeled!
Directions:
Soak the walnuts in a bowl of water and set aside. After 20-30 minutes, drain, rinse and finely chop them.
Preheat the oven to 350 degrees and line an 8x8 pan with parchment paper.
Melt the butter or coconut oil, remove from heat and stir in the honey and vanilla.
Add in the eggs and whisk until well blended.
Add in almond flour, cinnamon, salt and baking soda and mix well.
Fold walnuts and apples into the batter.
Spread the batter into the greased pan and bake for 25 minutes until a toothpick comes out clean.
Cool in the pan for and cut into squares when serving. If using the Vanilla Icing, let the bars cool completely before icing them.
