Roasted Pork Tenderloin

This is super easy to make and I almost always double the recipe so there are guaranteed leftovers.  My oldest son loves this, he literally eats it off the serving platter before it is on the table. This is delicious served with Roasted Veggies or Butternut Squash Fries or eaten cold as a leftover with Yogurt Dip. There are recipes that sear the tenderloin before roasting it - I have done it both ways and it is delicious anyway you make it.

Prep Time: 15 minutes Cook Time: 25 minutes

Ingredients:

  • 1 - 1.5 pound pork tenderloin trimmed of any fat

  • 1 TBSP of additive-and sugar-free mustard

  • 2 TBSP avocado oil

  • ½  tsp sea salt

  • 1 tsp each of garlic powder, oregano, coriander and paprika  OR 1 tsp each of garlic powder, thyme, ground fennel and cumin (make sure there are no added or hidden starches in your spices)

Directions: 

  1. Preheat the oven to 425 degrees. 

  2. Trim tenderloin of fat and any silver skin and pat dry with a paper towel.  

  3. Rub 1 TBSP avocado oil and mustard all over the pork tenderloin. 

  4. Combine your seasonings and sprinkle onto the tenderloin then use your hands to rub the spices into the tenderloin until evenly coated.

  5. Place the tenderloin on a baking sheet and bake uncovered for 22-25 minutes, flipping once halfway through. 

  6. Bake until the center of pork registers at least 150˚F then transfer to a cutting board and let it rest 5-10 minutes. Slice and serve.

If you want to pan sear the pork first, pour 1 TBSP avocado oil in a cast iron or large sauté pan and sear each side for 2-3 minutes.  Then place in the oven and make for 15-18 minutes until the temperature reaches at least 150 degrees.
