Butternut Squash Fries (or Cubes)

These are a staple! These are super easy to digest, and it is a scrumptious side dish. We did (and still do) eat them every night at dinner. My children prefer them if they are slightly singed. On the outside they are crispy and greasy like a French fry. On the inside they are soft and yummy. 

Prep Time: 10 min.   Cook Time: 40 minutes

 Ingredients:

  • 3 cups (or 3 handfuls) of sliced butternut squash. If you prefer them lightly burnt, then make sure to cut your butternut squash into thinly sliced pieces

  • 4-5 TBSP olive oil

  • ½ tsp each of salt, paprika and thyme OR ½ tsp each of salt, garlic powder and oregano (make sure your spices have no added or hidden starches)

Directions:

  1. Preheat the oven to 400 degrees.

  2. On a large baking pan or in a large bowl, toss the olive oil with the spices until well coated. 

  3. Scatter the butternut squash across the pan making sure that the squash are not overlapping or touching – we don’t want the squash to steam rather bake and crisp up!

  4. Bake for a total of 35-40 minutes tossing after 20 minutes.

  5. Serve hot with any dip you like – yogurt, pesto or on their own!
