Baked White Fish with Lemon and Dill
This is a quick and easy healthy meal. It can served with cauliflower rice along with any green veg like string beans or broccoli and a salad.
Ingredients:
4 6-ounce white fish fillets such as cod, wild halibut or tilapia
2 to 3 TBSP cup softened cultured butter – we use Kerrygold
½ tsp salt
1 tsp each of dried parsley and dill – you can also use fresh herbs if you have have them in which case you can use 2 TBSP
Zest of 1 lemon – once you zest the lemon, thinly slice it
Directions:
Preheat oven to 375 degrees.
Mix together the softened butter with salt, spices and lemon zest in a small bowl.
Line a baking sheet with tin foil (for easy clean up later) and place the fish fillets on the sheet.
Spread the butter mixture evenly on top of the fish – it may look like clumps of butter evenly dotted along the fillets. Then top each piece of fish with two lemon slices each.
Bake for 15-18 minutes – the fish should flake easily when done.
Serve immediately, spooning any of the juices over the juice and rice.
