Grand Granola Bars
Gorgeous Granola Bars
We have played around with so many granola bars and we have happily landed on this one. These are filled with nut butter, oats, honey, dried fruit and chocolate chips. This is not strict SCD as we use oats and sugar-free/dairy-free choThese are a chewy, not crispy sort of granola bar.
Prep time: 15 minutes Cook time: 20 minutes
Ingredients:
2 cups rolled oats
2/3 cup chopped nuts - we use a mix of walnuts and pecans
2/3 cup chopped dates and dried apricots (we sometimes also use dried cherries - with no sugar added)
1/3 cup sugar-free chocolate chips - Hu is our favorite brand
1/3 cup honey
1/3 cup almond butter or cashew butter
2 TBSP melted coconut oil
1 TBSP pure vanilla extract - no sugar added
1 tsp cinnamon
1/4 teaspoon salt
Directions:
Preheat the oven to 350 degrees and a 9 x 11 baking dish with parchment paper.
Mix together the melted coconut oil, nut butter, vanilla and honey - whisk until well-combined. Add in the cinnamon and salt.
Fold in the chopped nuts and dried fruit, chocolate chips and rolled oats. Stir until everything is mixed well together.
Scoop the batter into the pan. With the back of a spatula, press the bars into a single layer.
To make the chocolate, melt the cacao paste and cacao butter over very low heat until melted.
Bake the bars for 20 minutes and remove from the oven. Let cool completely so the bars can harden. If you don’t want them to crumble, you need to really wait until they are cool to cut - we never wait. :)
Store in the refrigerator.
