Spinach Balls

Chock full of green goodness (and iron), these are a delicious and incredibly healthy snack.  They make a fun and easy appetizer too.  Great with a yogurt dip!

Prep time: 20 minutes Cook time: 20 minutes

Ingredients:

  • 1 TBSP olive oil

  • 2 TBSP grass-fed cultured butter - we use Kerrygold

  • ½ cup finely chopped yellow onion

  • ½ tsp each of sea salt, ground sage, garlic powder and thyme (make sure there are no hidden or added starches in your spices)

  • 1 egg beaten

  • 10 oz frozen chopped spinach - thawed and well drained

  • ¼ cup aged cheese - parmesan or cheddar cheese

  • ¼ cup blanched almond flour, not almond meal - (I use Wellbees)

Directions:

  1. Preheat the oven to 375 degrees and line a baking sheet with parchment paper. 

  2. Heat 1 TBSP olive oil over medium heat and sauté the onion until soft, about 5 minutes. 

  3. Add 2 TBSP of butter and heat until melted.  Remove from heat and transfer to a medium-sized bowl. 

  4. Add the salt, spices and beaten egg and mix well. 

  5. Add the spinach - squeeze out as much water as you can before adding it to the mix.  I also chop the spinach even further so there are no large stem pieces. 

  6. Mix in the cheese and almond flour. 

  7. Scoop out small balls - approximately one heaping tablespoon - and spread out on your baking sheet.

  8. Bake for 20 minutes and serve warm with your favorite dipping sauce!
