Cinnamon Raisin Cookies
These are really tasty cookies, and could easily be a kind of breakfast cookie (if that is a thing) - soft and full of goodness, dried fruit and nuts. They are a great snack during the day and easy to take along anywhere!

Ingredients:
¼ cup softened grass-fed butter - we use salted Kerrygold
¼ cup honey
1 tsp vanilla extract (no sugar added)
1 large egg, room temperature
1 ¼ cup blanched almond flour - not almond meal (I use Wellbees)
2 TBSP coconut flour
2 tsp cinnamon
½ tsp baking soda
Pinch of sea salt
½ cup raisins (no sugar added - the only ingredient should be raisins, preferably organic)
½ cup chopped walnuts (soaked for 20-30 minutes, drained and rinsed)
Directions
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
With a handheld mixer, beat the butter and honey for 1 minute in a large bowl. Add vanilla and beat until mixed.
Add the egg and beat for one more minute.
In a small bowl, mix the almond flour, coconut flour, baking soda, cinnamon and salt.
Fold the dry mix into the large bowl and blend until just mixed in.
Add in the raisins and walnuts and stir with a wooden spoon or spatula.
Place heaping tablespoons of the cookie dough onto the parchment paper and flatten each ball slightly.
Bake for 15 minutes until golden brown. Let cool and enjoy!
