Circle Bread

There are so many recipes for grain-free breads, many of which my daughter liked initially, but then found them too eggy, sweet, gritty or “coconutty.”  These kind of look like pancakes (my daughter calls them “the circle bread”), however they are sturdy and hold up well for making avocado toast, turkey sandwiches, etc. 

Makes 6 circle breads. 

Prep Time: 10 minutes. Cook Time: 20 minutes

Ingredients:

  • 1 TBSP melted avocado or olive oil (or unsalted butter or coconut oil)

  • 2 TBSP 24-hour yogurt/Greek yogurt or farmers cheese

  • 1 egg

  •  ¼ cup water

  • 1 cup blanched almond flour, not almond meal

  • 1 tsp baking soda

  • ½ tsp apple cider vinegar

  • ¼ tsp salt

Directions:

  1. Preheat oven to 350 degrees and line your baking sheet with piece of parchment paper.  

  2. Whisk together oil, yogurt/farmers cheese and egg until well blended. 

  3. Add the baking soda and apple cider vinegar - it will fizz - and mix well.

  4. Add the salt, almond flour and water and mix. This will be a slightly thick batter.

  5. Spoon 6 flat circles onto the baking sheet lined with parchment paper. 

  6. Bake 15-17 minutes. 

  7. These can be refrigerated once fully cooled and then toasted or warmed as needed.
