Applesauce

Applesauce saved us in the early days of adapting to a refined sugar-free diet. it was able to satisfy a sweet tooth and is still a favorite snack and treat today.  This is delicious with a sweet red apple – our favorites are Envy, Gala, and Fuji. 

Prep Time: 10 minutes  Cook Time: 25 minutes

 Ingredients:

  • 6-8 large red apples

  • 1 ½ tsp cinnamon

Directions: 

  1. Peel and cut the apples into 1-inch pieces.  I always leave 1-2 apples unpeeled because the skin is where much of the pectin -  and healthy prebiotic - is.

  2. Place apple chunks in a medium-sized saucepan with 1 ½ - 2 cups of water and 1 tsp cinnamon.  Cover and boil for 20-25 minutes stirring occasionally and adding water if the mixture is getting dry.  The trick is to add enough water so the apples don’t burn, but not so much that the applesauce is watery.  Make sure to check every now and then - I have cleaned many a burned pan and even deliberated simply throwing one out (I persevered and did not.)

  3. Once the apples are soft and can be easily pierced with a knife, puree with a hand-held blender. This keeps nicely in the refrigerator for 4-5 days.  But if you are anything like my family, you may be making it every couple of days!
