Banana Bites

Banana Bites

These are a yummy and healthy snack and as a bonus, super easy to throw together!  I wanted a few snacks that didn’t use eggs or dairy and this one delivers! I use a mini-brownie tin for this recipe, but you could just as easily use a mini-muffin tin.  Makes about 12-14 minis. 

Prep time: 5 minutes Cook time: 20 minutes

Ingredients:

  • 1 very ripe banana

  • 2 TBSP melted coconut oil

  • 1 TBSP vanilla (no sugar added)

  • 1 TBSP pure almond butter (no other additives or ingredients - just almonds and salt.)

  • 3 TBSP pure honey (no additives)

  • ½ tsp baking soda

  • ¼ tsp sea salt

  • 1 tsp cinnamon

  • 1 ½ cups blanched almond flour - not almond meal (I use Wellbees)

Directions:

  1. Preheat the oven to 350 degrees. 

  2. In a large bowl, beat the first 5 ingredients together.  

  3. Mix in the next four ingredients and stir until combined.

  4. Measure out about 1 TBSP or so into each muffin or brownie container and bake for 20 minutes.
