Chicken Salad
This is an easy, throw-together quickly, healthy and filling snack or light lunch. We roast a chicken every week so this is on rotation fairly often. My daughter loves to eat this with sliced avocados and my other kiddos spoon it onto crackers. I love a scoop of it over salad greens!
Prep time: 5 minutes
Ingredients:
2 cups cooked chicken chopped
⅓ cup sugar-and additive-free or homemade mayonnaise
1 tsp lemon juice
1 tsp each of dill and dried tarragon (optional) - make sure your spices have no added starches
2 TBSP fermented chopped pickles or relish (no sugar added!) We like Bubbie’s.
Directions:
Combine all ingredients together and serve any way you like!
