Berry Popsicles

Popsicles are a perfect sweet and healthy treat and this one is consistently a fave.  It makes 5 full size popsicles. I know…quite annoying it does not make and 6 (especially if you have 3 kids) and perhaps when I make this with fresh fruit, i will figure out the measurements, but since this uses frozen fruit and a 10oz bag, 5 popsicles it is! Or 10 mini ones  - depending on what fun popsicle molds you have!

Prep time: 10 minutes Cook time: 6 hours in the freezer

Ingredients:

  • 10 oz bag of mixed berries 

  • ½ cup water

  • 2 TBSP pure honey (no additives)

  • 2 TBSP 24-hour fermented yogurt (if SCD) or Greek yogurt 

Directions:

  1. In a small saucepan, gently simmer the berries and ½ cup water for about 8-10 minutes until soft (this step is optional - you can also just let the berries thaw out a bit, but we find it is easier on the belly if cooked).

  2. Let the mixture cool and puree/blend the berries in a blender or with a handheld blender. You can strain out the seeds using a tightly weaved strained; place the strainer over a small bowl and pour the mixture into the strainer, stirring and pushing the mixture through it into the bowl, leaving the seeds behind.

  3. Mix in the honey into the berry puree and whisk until smooth.  Then mix in the yogurt.

  4. Pour into your molds (these are our current fave) and freeze for 4-6 hours.
