Peanut Butter Patties
These are delicious with or without the chocolate glaze. The almond flour gives it that gritty (in a good way) taste that the store-bought peanut butter cups do. My daughter thinks this version tastes better! The chocolate is delicious but high octane (lots of caffeine), especially if you are used to milk chocolate - my daughter had a hard time sleeping when she ate these at night, which is what prompted me to make these sans chocolate as well! This will make about 20-22 patties.
Prep time: 15 minutes (plus freezing time)
Ingredients:
Peanut Butter Filling
1/3 cup blanched almond flour
1/2 cup peanut butter (no sugar added)
1/3 cup pure honey (no additives)
Pinch of salt
Chocolate Glaze
1/2 cup cacao paste (we use Sunfood brand)
1/2 cup cacao butter (we use Sunfood or Nativa brand)
1/3 cup honey
1 tsp vanilla extract (no sugar added)
Pinch of sea salt
Directions:
For the peanut butter filling, mix together all the ingredients in a small bowl.
You can use a mold or smoosh my hand into balls or patties. Freeze for a couple of hours if you are going to dip if you plan to dip them in the chocolate. If not, enjoy the as is! They stay best when stored in the freezer.
To make the chocolate, melt the cacao paste and cacao butter over very low heat until melted.
Remove from heat and stir in the vanilla and sea salt.
Line a small baking sheet with parchment paper.
Once the peanut butter patties are fully frozen and the chocolate has cooled a little, submerge/dunk the peanut butter patties into the chocolate and place on the lined baking sheet. You will have to move quickly and there is no neat way to do this - we made a complete mess.
Place in the freezer until the chocolate hardens and enjoy!
