Almond Flour Chocolate Chip Muffins

These muffins are a total hit in my family. We love using the date sweetened Hu semi-sweet chips to keep it refined sugar free. This recipe is super is simple and makes 12 muffins — they disappear quickly!

Prep time: 5 minutes. Cook time: 18 minutes

Ingredients:

  • 3 large eggs, room temperature

  • 1/4 cup olive oil (or avocado oil)

  • 1/4 cup pure honey (no additives)

  • 1 tsp pure vanilla extra (no sugar added)

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon baking soda

  • 2 cups blanched almond flour

  • 1/2 cup chocolate chips (we use Hu semi-sweet — dairy- and refined sugar -free.

Directions:

  1. Preheat the over to 350 degrees and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the eggs, olive oil, honey and vanilla until well blended.

  3. Stir in the sea salt, baking soda and blanched almond flour.

  4. Add in the chocolate chips.

  5. Spoon the batter into prepared muffins and bake for 18 minutes,

  6. Remove from the oven and let cool completely before unwrapping them!
