White Bean Artichoke Salad

White Bean and Artichoke Salad

This is a quick and easy snack or lunch to throw together...and healthy too!  Perfect for keeping bellies full and satisfied. 

Prep Time: 10 minutes

Ingredients:

  • 2 cups navy or white beans (soaked overnight, drained and cooked) or 2 cups of canned and drained white beans

  • 1 12 oz additive-and sugar-free marinated artichoke hearts - drained and chopped.  Double check there is no added sugar.  Cane vinegar is made from sugar too, so you need to check the labels. You can also use water packed or frozen artichoke hearts and add olive oil and lemon.

  • 1 4 oz can black olives

  • 1 carrot peeled and thinly sliced into coins - optional 

  • 2 TBSP olive oil

  • Juice of one lemon

  • 1 avocado cut into small cubes

Directions:

  1. Mix together in a large bowl the white beans, chopped artichoke hearts, black olives and carrots if you are using them.

  2. Drizzle with the olive oil and lemon and stir a couple more times. 

  3. Dish into small bowls and top with avocado.
