Fish Bites

This is the solution for your leftover fish.  You can also deliberately make double the amount of fish for dinner and then make these wonderful fish bites in the next day or so.  The small shape of these are very appealing and fun to eat.  

Prep Time: 15 minutes Cook Time: 20 minutes

Ingredients:

  • 2 eggs, beaten

  • 1 TBSP 24-hour yogurt or Greek yogurt (you could also use a additive-and sugar-free mayonnaise) 

  • 1 TBSP lemon juice

  • 2 cups cooked white fish, flaked

  • 2 TBSP red onion, minced

  • 2 TBSP fresh parsley, minced

  • ½ tsp each of sea salt, garlic powder and turmeric - make sure spices do not include added starches

  • ½ cup of blanched almond flour (not almond meal) - (I use Wellbees)

  • 4 TBSP of avocado oil

Directions:

  1. In a large bowl, beat the eggs and mix in the yogurt and lemon.  

  2. Stir in the fish, onion, parsley, salt and spices.

  3. Mix in the almond flour and stir until everything is well blended.  

  4. In a large sauté pan, heat 1-2  TBSP avocado oil over medium-high heat until it starts to sizzle.

  5. Scoop the fish batter with a tablespoon - I like them on the smaller side - they cook faster and are more of a finger food. 

  6. Cook for 2-3 minutes each side. 

  7. Between batches, I wipe the pan with a paper towel if there are lots of burned bits.

  8. Add 1 TBSP of oil as needed between batches. 

  9. Serve these immediately with Tartar Sauce!
