Chicken Soup and Veggies
This is a delicious, healing and soothing soup - something to eat whenever you need to go easy on your belly. It is chock full of vegetables - we like vegetables like zucchini and broccoli, making this a non-traditional chicken soup, but also add carrots and celery plenty of other times.
Prep Time: 20 minutes Cook Time: 20 minutes
Ingredients:
2 zucchini and or yellow squash, finely diced - peeled and deseeded if needed
1 yellow pepper - finely chopped
2-3 cups spinach finely chopped - destemmed
1 cup broccoli florets, in very small pieces
1 TBSP olive oil
2 cups of roasted, shredded chicken
4-6 cups of Homemade Chicken Broth
Directions
Heat olive oil in a large saucepan.
Over medium heat, sauté all the vegetables you are using for 6-8 minutes.
Add the chicken and chicken broth.
Bring to a boil and boil rapidly for 2-3 minutes, then lower the heat and simmer gently for about 5 minutes, until everything is heated through.
Ladle into bowls and heal!
