Date Paste

This is a wonderful sweetener to have on hand for baking or to smear on buttered bread or mix into yogurt.  It lasts a few weeks in the fridge in a seal proof container, but it probably won’t last that long!

Ingredients:

  • 2 cups pitted Medjool dates (plus soaking water)

  • 1/2 cup water

  • 1 tsp cinnamon

Directions:

  1. Soak the dates in boiling water for at least 20 minutes.

  2. Drain and in a food processor combine the dates, ½ cup water and cinnamon.  Process until smooth.

  3. Store the date paste in a sealed container in the refrigerator.  It should last several weeks.
