Roasted Cabbage with Parmesan Cheese

We love cabbage served a zillion ways, but there is something about this roasted cabbage with lots of olive oil and parmesan cheese that makes this recipe shine. This is a great side dish to something like pulled pork or grilled chicken, or a hearty vegetarian meal on its own served over white beans (this can be vegan if you omit the parmesan cheese).

Prep time: 10 minutes                       Cook time: 30 minutes 

Ingredients: 

  • 1 medium head green cabbage - cored and cut lengthwise to 1 ½ inch slick slices

  • ½ cup extra virgin olive oil

  • ½ teaspoon of salt and pepper to taste

  • ,1 teaspoon each of dried thyme and dill

  • ½ cup grated parmesan cheese (optional)

  • 2-3 TBSP chopped fresh parsley

Directions:

  1. Preheat the oven to 400 degrees.

  2. Place cabbage wedges on a baking sheet, drizzle with the olive oil, salt and pepper, spices and parmesan cheese. You can rub the spices and cheese into the cabbage.

  3. Bake for 30 minutes - garnish with extra Parmesan if desired and fresh parsley.
