Herb Hummus with Artichokes

This is a light and flavorful hummus recipe that is perfect for a hearty snack or light lunch served with crackers or veggies.  The addition of artichoke hearts brings it up a level from your everyday hummus. 

Prep Time: 5 minutes  Cook time: 5 minutes

Ingredients:

  •  1 ½ cup cooked navy or white beans (we do dried beans, soaked overnight, rinsed and then cooked) or 1 can of beans

  • Juice of 1 lemon

  • ⅓ cup tahini

  • ¾ tsp salt

  • 1 cup of fresh parsley or cilantro leaves or a mix

  • 1 TBSP water

  • 1 small jar marinated artichoke hearts (make sure there is no sugar added to the marinade) - drained and chopped

  • 1 tsp paprika

 Directions: 

  1.  Combine all ingredients except for the artichokes and paprika  in a food processor - I use a mini chop. 

  2. Spread on a plate or a bowl and cover with the artichokes and paprika.  

  3. This can keep for 3-4 days in a tightly sealed container in the refrigerator.
