Chicken Fajitas

This is a great meal to make with leftover roast chicken!  We serve it with avocado and red lentil tortillas. I love this meal because it is something I can do quickly with leftovers - chicken that has already been roasted and beans that have already been cooked. 

Prep Time: 10 minutes.  Cook Time: 20 minutes 

Ingredients: 

  • 2 TBSP olive oil

  • ¾ cup chopped onion

  • 1 small red bell pepper, chopped

  • 1 cup red cabbage, chopped

  • 1 zucchini, chopped

  • ½ tsp sea salt and garlic powder

  • 1 tsp each of cumin, coriander, paprika and oregano (make sure your spices have no additives or hidden starches)

  • 2-3 cups of cubed or shredded roasted chicken

  • 2 cups black beans (we do dried beans and soak for 24 hours, drain and cook)

  • 1 cup homemade chicken broth or water

Directions:

  1. Heat olive oil over medium heat in a large pan. Add the chopped onion and sauté for 3-4 minutes.

  2. Add the red bell pepper and cabbage and sauté for 3 more minutes. Add the zucchini and sauté for 3-4 more minutes until all the veggies are softened.

  3. Add the salt, garlic powder and spices into the mix and stir continuously for one minute.

  4. Add the chicken, black beans and 1 cup of liquid. Lower the heat and gently simmer for 5 -10 minutes until everything is heated through.

  5. Serve with avocado, red lentil tortillas, Yogurt Dip and salsa.
