Chicken Fajitas
This is a great meal to make with leftover roast chicken! We serve it with avocado and red lentil tortillas. I love this meal because it is something I can do quickly with leftovers - chicken that has already been roasted and beans that have already been cooked.
Prep Time: 10 minutes. Cook Time: 20 minutes
Ingredients:
2 TBSP olive oil
¾ cup chopped onion
1 small red bell pepper, chopped
1 cup red cabbage, chopped
1 zucchini, chopped
½ tsp sea salt and garlic powder
1 tsp each of cumin, coriander, paprika and oregano (make sure your spices have no additives or hidden starches)
2-3 cups of cubed or shredded roasted chicken
2 cups black beans (we do dried beans and soak for 24 hours, drain and cook)
1 cup homemade chicken broth or water
Directions:
Heat olive oil over medium heat in a large pan. Add the chopped onion and sauté for 3-4 minutes.
Add the red bell pepper and cabbage and sauté for 3 more minutes. Add the zucchini and sauté for 3-4 more minutes until all the veggies are softened.
Add the salt, garlic powder and spices into the mix and stir continuously for one minute.
Add the chicken, black beans and 1 cup of liquid. Lower the heat and gently simmer for 5 -10 minutes until everything is heated through.
Serve with avocado, red lentil tortillas, Yogurt Dip and salsa.
