Chicken Burgers

Here is a quick and easy dinner that will put a smile on everyone’s faces.  These tasty chicken burgers can be grilled or pan fried (I use a cast iron pan).  And you pull together all the fixins’ that everyone can pick and choose from - we do guacamole, sautéed red and yellow peppers, creamy sauce, pickles and pico de gallo.  We do regular buns, gluten free buns and lettuce wraps so everyone can eat it how they need to!

Prep time: 10 minutes       Cook time: 30 minutes

 Ingredients:

  • 1 TBSP avocado oil

  • ½ cup chopped red onion

  • I cup chopped greens - I use spinach, kale or beet greens

  • ½ tsp sea salt

  • ½ tsp paprika (make sure your spices have no added starches)

  • 1 tsp each of cumin, coriander and garlic powder (make sure your spices have no added starches)

  • 4 TBSP avocado oil for frying

  • 2 pounds dark meat ground chicken (7% fat) - don’t use chicken breast or you will have dry burgers! Make sure there are no added additives if you get pre-packaged.


Directions:

  1. Heat the 1 TBSP avocado oil and sauté the red onions and greens for 5-7 minutes. Set aside and let cool slightly

  2. In a large bowl, mix the salt and spices with the onion and veggie mixture.

  3. Add the ground chicken and mix well.

  4. Heat 1-2 TBSP avocado oil in a large sauté or cast-iron pan until the oil is shimmering.

  5. Take scoops of the ground chicken, the size of tennis balls, place in the pan and flatten slightly. My pan can hold 3 at a time and I make about 8 burgers.

  6. Lower the heat to medium and cook on one side for 3-4 minutes until browned, flip and cook for 2-3 more minutes on medium. Then turn the heat to low, cover and cook for about 8-10 more minutes until the inside temperature reaches at least 165 degrees. I let mine go until about 170-175 degrees.

  7. Remove from the heat and keep warm in an oven set to 150 while you make the others. Wipe the pan clean, add more avocado oil and make the rest of the burgers.
